There is truly nothing better than baking with fresh fruit during the peak of summer. This cake is a regular in my kitchen because the Greek yogurt keeps the sponge so tender and moist, even with all those big chunks of fruit tucked inside.

My favorite thing about this recipe is the contrast between the sweet berries, the juicy peaches, and that golden crumb topping. It is wonderful served warm with a scoop of vanilla ice cream, but it is just as good with a hot cup of coffee the next morning.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain Greek yogurt
  • 1/3 cup melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, diced
  • 1/2 cup fresh blueberries
  • 1/4 cup flour for the topping
  • 2 tablespoons sugar for the topping
  • 2 tablespoons cold butter for the topping

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a 9 inch round cake pan.

    In a small bowl, mix the 1/4 cup flour, 2 tablespoons sugar, and 2 tablespoons cold butter with a fork until you have a crumbly texture. Set this aside.

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

    In a separate bowl, mix the Greek yogurt, melted butter, egg, and vanilla extract until smooth.

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

    Carefully fold in the diced peaches and blueberries.

    Spread the batter into your prepared pan and sprinkle the streusel topping evenly over the top.

    Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
