Hearty Chicken Scarpariello
A rustic and flavorful Italian American favorite that brings together juicy chicken, savory sausage, and tangy peppers.
dailyrecipesbook.comChicken Scarpariello is one of those meals that feels like a big hug on a plate. It is famous for that tangy and slightly spicy pan sauce that ties the chicken and sausage together perfectly, and it always tastes even better the next day after the flavors have had time to settle.
My favorite way to serve this is with a side of crusty bread or maybe some roasted potatoes. The sauce is the real star here, so make sure you have something on hand to mop up every last drop from the bottom of your pan.
Ingredients
- 2 pounds chicken thighs, bone in and skin on
- 1 pound Italian sausage links, sliced into pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/2 cup cherry peppers, pickled and sliced
- 1/2 cup green olives, pitted
- 1 tablespoon fresh rosemary, chopped
- Salt and black pepper to taste
Instructions
- 1
Pat the chicken thighs dry and season them well with salt and pepper.
- 2
Heat the olive oil in a large skillet over medium high heat and brown the chicken until the skin is golden, then remove it from the pan.
- 3
Add the sausage slices to the same pan and cook until browned, then remove and set aside with the chicken.
- 4
Add the onion and bell pepper to the pan and cook until they soften, about five minutes.
- 5
Stir in the garlic and cook for one minute until it smells fragrant.
- 6
Pour in the white wine to deglaze the pan, scraping up all those tasty browned bits from the bottom.
- 7
Stir in the chicken broth, cherry peppers, olives, and rosemary.
- 8
Return the chicken and sausage to the pan, cover, and let everything simmer for about 20 minutes until the chicken is cooked through.
- 9
Remove the lid and cook for another five minutes if you want the sauce to thicken up a bit more before serving.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. This dish is excellent served alongside mashed potatoes or a simple green salad to balance the rich, savory sauce.
