When my garden starts producing more zucchini than I know what to do with, this casserole is always my first choice. It turns mild zucchini into something rich and flavorful that even the picky eaters in my house will reach for seconds of.

My secret to the best texture is making sure you squeeze the extra moisture out of the zucchini after shredding it. It keeps the final dish from getting watery while it bakes in the oven.

Ingredients

  • 4 cups shredded zucchini
  • 1 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped yellow onion
  • 1 cup breadcrumbs
  • 1/4 cup melted butter
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a medium baking dish.

    Place the shredded zucchini in a colander, sprinkle with salt, and let it sit for 10 minutes. Use a clean kitchen towel to squeeze out as much water as possible.

    In a large mixing bowl, combine the squeezed zucchini, eggs, cheddar, parmesan, onion, half of the breadcrumbs, melted butter, pepper, and garlic powder.

    Spread the mixture evenly into your prepared baking dish.
