The flavor is better, the texture is perfect, and you can keep them in your freezer for a quick meal anytime.

My secret for the best filling is using a mix of pinto beans and leaving the liquid in one of the cans to keep everything extra creamy. Do not skip the final step of toasting the burritos in a skillet, as that golden, crispy exterior is what truly makes this recipe special.

Ingredients

  • 1 tablespoon canola oil or avocado oil
  • 1 small yellow onion, diced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 2 cans pinto beans (keep liquid in one can, drain and rinse the other)
  • 1/4 cup water
  • 1/2 cup smooth salsa
  • 2 cups sharp cheddar cheese, shredded
  • 8 large burrito size flour tortillas
  • Butter or nonstick cooking spray for the skillet

Instructions

    Heat the oil in a large skillet over medium low heat and cook the diced onion for about 8 minutes until softened and golden.

    Stir in the salt, garlic powder, cumin, and pepper, cooking for 30 seconds until fragrant.

    Add the pinto beans, water, and salsa to the pan, bringing the mixture to a gentle simmer.
