When four o'clock rolls around and everyone is asking for a snack, these little pizzas are my favorite secret weapon. They are simple to assemble, customizable, and always hit the spot when you need something warm and cheesy in a hurry.

I love keeping a few packages of muffins in the freezer so I can whip these up at a moment's notice. You can use your favorite jarred sauce and any toppings you have hiding in the fridge to make them your own.

Ingredients

  • 4 English muffins, split in half
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Optional toppings like pepperoni, sliced olives, or bell peppers
  • A pinch of dried oregano

Instructions

    Preheat your oven to 375 degrees Fahrenheit.

    Place the English muffin halves on a baking sheet, cut side facing up.

    Toast the muffins in the oven for about 5 minutes so they get a little crispy.

    Remove the tray and spread a spoonful of marinara sauce onto each muffin half.

    Sprinkle generously with the mozzarella cheese and add any extra toppings you like.

    Place the pizzas back into the oven and bake for 10 to 12 minutes, or until the cheese is melted and bubbling.

To freeze these for later, assemble them on a tray and flash freeze them before wrapping each one individually. When you are ready to eat, just pop them in the oven for a few extra minutes from frozen. You can also add a sprinkle of parmesan or red pepper flakes for extra flavor.
