Dark Chocolate Sea Salt Peanut Butter Bites
A rich, satisfying treat made with dark chocolate and creamy peanut butter that is not too sweet.
I have always loved treats that lean a bit more savory and less sugary. If you are like me and prefer a rich dark chocolate with a hint of salt over super sweet candies, you are going to love these homemade peanut butter bites. They are perfect for snacking during movie nights, or keeping in your desk drawer for a quick afternoon pick me up.
The best part is how easy they are to make with just a few simple pantry ingredients. You can use your favorite high quality dark chocolate to control the sweetness, and a pinch of flaky sea salt on top makes all the flavors pop.
Ingredients
- 8 ounces dark chocolate, 70% cocoa or higher, chopped
- 1/2 cup creamy peanut butter, preferably unsweetened
- 2 tablespoons maple syrup or honey
- 1 tablespoon coconut oil, melted
- 1/4 teaspoon fine sea salt
- Flaky sea salt, for topping
Instructions
- 1
Line a mini muffin tin with 12 paper liners and set it aside.
- 2
In a small bowl, stir together the peanut butter, maple syrup, melted coconut oil, and fine sea salt until the mixture is smooth.
- 3
Melt the dark chocolate in a microwave safe bowl in 30 second bursts, stirring in between each burst until it is completely smooth.
- 4
Spoon about one teaspoon of the melted dark chocolate into the bottom of each muffin liner.
- 5
Drop a small spoonful of the peanut butter mixture right into the center of the chocolate in each cup.
- 6
Cover the peanut butter with the remaining melted dark chocolate, smoothing the tops gently with the back of a spoon.
- 7
Sprinkle a few flakes of sea salt on top of each bite.
- 8
Place the tray in the freezer for about 20 minutes until the chocolate is firm, then serve.
๐ก Tips
Store these bites in an airtight container in the refrigerator for up to two weeks, or keep them in the freezer for a colder treat. If you want a bit of crunch, you can stir some chopped peanuts into the peanut butter filling before assembling.
