When the day gets long and I need a reliable meal, I always turn to this lemon garlic chicken. It is light yet satisfying and uses basic pantry staples that I almost always have on hand in my kitchen.

My favorite thing about this recipe is how the lemon juice creates a lovely sauce while the chicken roasts. It is a fantastic way to get a home cooked meal on the table without spending all evening standing over the stove.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 large lemon, sliced into thin rounds
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the chicken breasts on a large rimmed baking sheet.

  3. 3

Drizzle the olive oil over the chicken and rub in the minced garlic, oregano, salt, and pepper.

  4. 4

Arrange the lemon slices on top of and around the chicken pieces.

  5. 5

Bake for 20 to 25 minutes or until the chicken is cooked through and reaches an internal temperature of 165 degrees.

  6. 6

Let the chicken rest for five minutes before serving with a sprinkle of fresh parsley.

💡 Tips

This chicken tastes great served over steamed rice or with a simple side salad. If you have leftovers, keep them in an airtight container in the fridge for up to three days and use them for quick lunches.
