There is nothing quite like a warm burrito to hit the spot after a long day. These are packed with seasoned ground beef, pinto beans, and plenty of melty cheese to keep everyone happy at the dinner table.

I love making a big batch of these on the weekend because they store so well. When you need a quick meal, just grab one from the freezer and toast it in a skillet until the outside is perfectly golden brown.

Ingredients

  • 1 pound ground beef
  • 1 can pinto beans, drained and rinsed
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • Optional toppings like sour cream, guacamole, or extra salsa

Instructions

    Cook the ground beef in a large skillet over medium heat until it is fully browned, then drain off any excess fat.

    Stir in the pinto beans, salsa, and taco seasoning. Let the mixture simmer for about 5 minutes so the flavors can combine.

    Spoon a portion of the beef mixture into the center of each flour tortilla and top with a sprinkle of shredded cheese.

    Fold in the sides of the tortilla, then roll it up tightly to enclose the filling.

💡 Tips

To freeze, wrap each burrito individually in foil or plastic wrap and place them in a freezer bag. You can reheat them straight from frozen in a skillet over low heat until warmed through. Serve these with a side of cilantro lime rice for a filling meal.
