Creamy Poppy Seed Chicken Casserole

- 1 cup sour cream or plain Greek yogurt
- 1 can (10.75 ounces) condensed cream of chicken soup
- 1/2 cup shredded parmesan cheese
- 2 teaspoons poppy seeds
- 2 cups Ritz crackers, crushed
- 1/2 cup unsalted butter, melted

This dish is wonderful when served over white rice or egg noodles to soak up the sauce. If you have leftovers, they keep well in the fridge for about three days. You can also assemble the chicken part ahead of time and just add the cracker topping right before you put it in the oven.
