If you love the classic pot roast but want something a bit quicker and more budget friendly, you have to try this version with chicken. It is a true dump and go dinner that requires almost zero effort, making it a lifesaver on busy weeknights.

You do not need to add any water or stock because the chicken creates its own delicious sauce as it cooks with the butter and seasonings. My favorite way to serve this is piled high on toasted buns or turned into flavor packed nachos for the family.

Ingredients

  • 3 lbs boneless skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter
  • 1/2 cup jarred pepperoncini peppers

Instructions

    Place the chicken breasts in a single layer at the bottom of your slow cooker.

    Sprinkle the ranch seasoning and the au jus gravy mix evenly over the top of the chicken.

    Place the stick of butter on top of the chicken and scatter the pepperoncini peppers around the pan.

    Cover the slow cooker and cook on low for 6 hours or on high for 3 to 4 hours.

    Once the chicken is tender and reaches 165 degrees, use two forks to shred the meat directly in the slow cooker so it absorbs all that wonderful sauce.

💡 Tips

Store any leftover chicken in an airtight container in the refrigerator for up to three days. If you prefer a milder flavor, you can use fewer pepperoncini peppers, or add a bit more if you really enjoy that tangy kick.
