Easy Chicken Sorrentino

Since there is no breading involved, this dish stays light and is perfect for a weeknight dinner. I find that using fresh basil leaves right at the end really brings all the flavors to life.
Ingredients
- 2 chicken breasts, sliced into thin cutlets
- 1 small eggplant, sliced into thin rounds
- 4 slices prosciutto
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh basil leaves for garnish
Instructions

Season the chicken cutlets with salt and pepper.

Heat the olive oil in a large skillet over medium heat.

Brown the eggplant slices on both sides until tender, then remove them from the pan.

In the same pan, cook the chicken cutlets until they are golden brown and cooked through.

Top each chicken piece with a slice of cooked eggplant and a slice of prosciutto.

💡 Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this in the oven at 350 degrees until the cheese melts again. Serve this alongside a side of steamed broccoli or a fresh green salad for a complete meal.
