Refreshing Thai Cucumber Salad

This simple salad is a staple in my house whenever I serve anything with a bit of heat. The cool crunch of the cucumber paired with a bright, tangy dressing is exactly what you need to balance out big flavors.
It takes only a few minutes to throw together, and it tastes even better if you let it sit in the fridge for a little while before eating. Just make sure to slice your cucumbers thinly so they soak up all that delicious dressing.
Ingredients

- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon finely chopped red onion
- 1 tablespoon fresh cilantro, chopped
