Nothing beats the taste of vine ripened tomatoes picked straight from the farmers market during the height of summer. This simple salad is my go to recipe when I want to let the quality of the ingredients shine without a lot of fuss.

I recommend using a mix of different tomato varieties to get a beautiful range of colors and textures on your plate. A quick sprinkle of sea salt is all you really need to bring out the natural sweetness of the fruit.

Ingredients

  • 4 large ripe heirloom tomatoes, sliced
  • 1/2 cup fresh basil leaves, torn
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. 1

Arrange the sliced tomatoes on a large serving platter in an overlapping pattern.

  2. 2

Scatter the fresh basil leaves evenly over the top of the tomato slices.

  3. 3

Drizzle the olive oil and balsamic vinegar over the salad in a slow, steady stream.

  4. 4

Finish by sprinkling the sea salt and black pepper over the entire dish.

  5. 5

Serve immediately at room temperature for the best flavor.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to one day, but try to eat it quickly as the tomatoes will soften. This salad is wonderful served alongside grilled chicken or crusty bread to soak up the juices.
