Sheet Pan Doner Kebab

Ingredients

- 1/2 onion, finely grated
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 4 pita breads
- 1 cup prepared tzatziki sauce
- Optional toppings: shredded lettuce, diced tomatoes, pickled red onions, fresh dill

Preheat your oven to 400 degrees Fahrenheit.

In a bowl, mix the ground beef with the grated onion, minced garlic, salt, oregano, cumin, paprika, and black pepper until the mixture is uniform and a bit tacky.

Divide the meat into two equal portions. Place each portion between two large sheets of parchment paper and roll it out into a thin rectangle.

Fold the parchment paper into thirds over the meat and transfer the packets to a baking sheet.

Bake for 15 minutes, then remove the meat from the parchment and tear it into small pieces.

Spread the meat pieces out in a single layer on the baking sheet and place them under the broiler for about 3 minutes until the edges are nicely browned and crispy.

💡 Tips
Make sure to grate your onion very finely so the meat stays together. You should also strain your cucumber well if you make your own tzatziki to ensure the sauce stays nice and thick. Keep a close eye on the broiler as the meat browns very quickly.
