When summer sweet corn is at its best, you really do not need to do much to make it shine. It is the star of any dinner plate and brings such a happy, seasonal feeling to the table.

My favorite way to cook it is to keep things very simple. A quick boil in water is all it takes to get that perfect crunch and sweet flavor that everyone in my family loves.

Ingredients

  • 4 ears of fresh sweet corn, husked and silked
  • 4 tablespoons salted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Water for boiling

Instructions

    Fill a large pot with enough water to fully cover the corn ears.

    Bring the water to a rolling boil over high heat.

    Carefully add the corn to the boiling water.

    Cook for 3 to 5 minutes until the kernels are bright yellow and tender.

    Remove the corn from the water using tongs and let it drain for a minute.

    Brush each ear with butter and sprinkle with salt and pepper before serving.

💡 Tips

To store leftovers, cut the kernels off the cob and keep them in an airtight container in the fridge for up to three days. You can reheat them in a pan with a little butter for a quick side dish later in the week.
