There is something so wonderful about the smell of a roasting chicken filling the kitchen. It is one of those meals that brings the whole family to the table with big smiles.

My best tip for success is to pat the skin dry with paper towels before seasoning. This little extra step makes all the difference in getting that skin golden and crispy.

Ingredients

  • 1 whole roasting chicken, about 4 pounds
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 large lemon, halved
  • 1 head of garlic, cut in half horizontally

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Pat the chicken dry inside and out using paper towels.

    Place the chicken in a roasting pan or a large cast iron skillet.

    Rub the olive oil all over the outside of the chicken.

    Mix the rosemary, thyme, salt, and pepper in a small bowl, then rub this mixture all over the bird.

    Stuff the cavity of the chicken with the lemon halves and the garlic halves.

    Roast the chicken for about 75 to 90 minutes, or until the juices run clear and an internal thermometer reads 165 degrees Fahrenheit in the thickest part of the thigh.

    Let the chicken rest for 15 minutes before carving to keep the meat nice and juicy.
