I rely on my slow cooker so much for busy weeknights because it makes getting dinner on the table feel easy. This balsamic pork loin is a family favorite because the garlic and vinegar sauce creates such a deep, rich flavor while keeping the meat perfectly juicy.

The beauty of this recipe is that it turns out just as delicious as an oven roasted meal but with much less effort. Just sear the meat, toss everything in the pot, and let the slow cooker do the hard work for you.

Ingredients

  • 3.5 to 4 pound pork loin, trimmed of excess fat
  • 2 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup balsamic glaze or reduction
  • 1/2 cup low sodium chicken broth
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon molasses
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 2 sprigs fresh rosemary
  • Fresh chopped parsley for serving

Instructions

    Pat the pork loin dry with paper towels and trim off any thick fat layers.

    Heat the olive oil in a large skillet over medium high heat. Sear the pork loin for 3 to 4 minutes per side until it is golden brown.

    In a medium bowl, whisk together the balsamic vinegar, balsamic glaze, chicken broth, soy sauce, molasses, brown sugar, garlic, onion powder, Italian seasoning, and smoked paprika.

    Place the seared pork into your slow cooker with the fat side facing up.

    Pour the sauce mixture over the meat and top with the fresh rosemary sprigs.

    Cover and cook on LOW for 6 hours or on HIGH for 3 hours.

    Carefully remove the pork to a cutting board and let it rest for 10 minutes before slicing it to serve.

Store any leftovers in an airtight container in the fridge for up to 3 days. You can also shred the extra meat and use it for sandwiches with barbecue sauce. Always let the meat rest before slicing so the juices stay inside.
