Baked Street Corn Dip Taquitos

If you love the flavor of Mexican street corn, you are going to fall in love with these taquitos. They are packed with tender corn, plenty of melty cheese, and just enough spice to keep things interesting. Because we bake them instead of frying, they are much easier to pull together on a busy weeknight.

I like to serve these with a big dollop of lime mayonnaise and a sprinkle of extra cheese on top. They disappear almost as soon as they come out of the oven, so you might want to consider making a double batch for your next gathering.

Ingredients

  • 2 cups frozen or canned corn, drained
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled Cotija cheese
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 12 small flour or corn tortillas
  • 2 tablespoons melted butter
  • 1/2 cup mayonnaise mixed with 1 tablespoon lime juice
  • 1 fresh avocado, sliced for serving

Instructions

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    In a medium bowl, stir together the corn, Monterey Jack cheese, half of the Cotija cheese, sour cream, chili powder, and garlic powder until well combined.

    Warm the tortillas in the microwave for 20 seconds so they are soft and easy to roll.

    Place a spoonful of the corn mixture near the edge of each tortilla, then roll them up tightly.

    Place the taquitos seam side down on the baking sheet.

    Brush the tops of the taquitos with melted butter to help them get nice and crispy in the oven.

    Bake for 15 to 20 minutes until the edges are golden brown.

    Serve warm with the lime mayo, remaining Cotija cheese, and fresh avocado slices.

Store any leftover taquitos in an airtight container in the fridge for up to three days. You can reheat them in the oven or an air fryer to get the crunch back. Serve them alongside a simple salad or extra salsa for dipping.
