Crispy Vietnamese Shrimp Rice Paper Cakes
These quick and crunchy shrimp cakes are a delightful snack that uses rice paper for a perfect crispy shell.
dailyrecipesbook.comIf you love a good crunch, you are going to adore these little shrimp cakes. They are so simple to put together using rice paper sheets, which turn perfectly golden and crispy in the pan after just a few minutes.
People love this dish because it feels like a fancy appetizer but takes almost no time to prepare. My biggest tip is to make sure you pat your shrimp dry before mixing them with the seasoning so the filling does not get too wet.
Ingredients
- 8 sheets of round rice paper
- 1 cup raw shrimp, peeled and finely chopped
- 1 green onion, thinly sliced
- 1 teaspoon fish sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 3 tablespoons vegetable oil for frying
Instructions
- 1
In a small bowl, mix the chopped shrimp, sliced green onion, fish sauce, sugar, and black pepper until well combined.
- 2
Take one sheet of rice paper and dampen it lightly with a little water so it becomes pliable.
- 3
Place a spoonful of the shrimp mixture in the center of the rice paper and fold the edges over to create a small square or circle parcel.
- 4
Heat the vegetable oil in a nonstick pan over medium heat.
- 5
Place the shrimp cakes in the pan and fry for about 2 or 3 minutes on each side until the rice paper is golden and crispy and the shrimp inside is cooked through.
- 6
Remove from the pan and let them drain on a paper towel for a minute before serving.
๐ก Tips
Serve these warm with a side of sweet chili sauce or a quick soy dipping sauce. If you have leftovers, keep them in an airtight container in the fridge and reheat them in a toaster oven to get that crunch back.
