These cookies are a favorite in my kitchen because they are so simple to put together. They have that lovely warm spice from the Biscoff spread that pairs perfectly with the sweetness of white chocolate.

Since you do not need to chill the dough or use an electric mixer, you can have a fresh batch ready in no time. They stay soft for days and make the whole house smell amazing while they bake.

Ingredients

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup creamy Biscoff cookie butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 and 1/2 cups quick oats
  • 1 cup white chocolate chips

Instructions

    Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper.

    In a large bowl, whisk together the melted butter, cookie butter, brown sugar, and granulated sugar until smooth.

    Add the egg and vanilla extract to the mixture and whisk until well combined.

    Stir in the flour, baking soda, and salt until just combined.

    Fold in the quick oats and white chocolate chips using a sturdy spoon or spatula.

    Scoop rounded tablespoons of dough and place them onto your prepared baking sheet, spacing them about 2 inches apart.
