Classic Homemade Buttermilk Pancakes
These fluffy, golden pancakes are the perfect way to start a slow weekend morning.
There is something so comforting about waking up to the smell of fresh pancakes on the griddle. This recipe is a staple in my kitchen because it uses simple pantry ingredients and results in the fluffiest stacks every single time.
My best tip is to let your batter rest for a few minutes while the pan heats up. This allows the flour to fully hydrate, which creates a much better texture for your final pancakes.
Ingredients
- 1 and 1/2 cups all purpose flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 and 1/4 cups buttermilk
- 1 large egg
- 3 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla extract

In a separate smaller bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix the batter because a few small lumps are perfectly fine.

Scoop about one quarter cup of batter onto the hot skillet for each pancake.

You can keep finished pancakes warm in an oven set to two hundred degrees while you finish the rest of the batch. If you have leftovers, store them in an airtight container in the fridge and pop them in the toaster to reheat.
