There is something so special about waking up to the smell of toasted oats. This chocolate crunch granola is a staple in my house because it feels like a treat while still being simple to put together with pantry staples.

My favorite way to keep those big, crunchy clusters is to avoid stirring the pan too much while it cools. Just let it sit undisturbed and you will get those perfect chunks every time.

Ingredients

  • 3 cups old fashioned rolled oats
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet chocolate chips

Instructions

  1. 1

Preheat your oven to 300 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a large mixing bowl, stir together the rolled oats, cocoa powder, and salt until everything is evenly coated.

  3. 3

Pour in the honey, melted coconut oil, and vanilla extract. Mix well until the oats are thoroughly coated and no dry spots remain.

  4. 4

Spread the mixture onto your prepared baking sheet in an even layer.

  5. 5

Bake for 25 to 30 minutes, keeping an eye on it so the edges do not burn.

  6. 6

Remove from the oven and let the granola cool completely on the pan without stirring. This helps the clusters form.

  7. 7

Once cool, sprinkle the chocolate chips over the top and break the granola into your desired cluster sizes before serving.

๐Ÿ’ก Tips

Store this in an airtight container at room temperature for up to two weeks. It tastes wonderful served over cold Greek yogurt or with a splash of almond milk. You can also mix in some dried cherries or almonds for extra texture.
