These corn fritters are one of my favorite things to make whenever fresh corn is in season. They have perfectly crispy edges and a tender middle that is packed with juicy corn kernels in every bite.

I love to balance the natural sweetness of the corn with savory scallions and a good handful of cheddar cheese. They are so easy to whip up and always disappear from the plate in record time.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup all purpose flour
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup thinly sliced scallions
  • 1 large egg
  • 1/4 cup milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons vegetable oil for frying

Instructions

    In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.

    Add the corn kernels, shredded cheddar cheese, and sliced scallions to the dry mixture.

    Stir in the egg and milk until the batter is just combined and the corn is evenly coated.

    Heat the vegetable oil in a large skillet over medium heat.

    Drop large spoonfuls of the batter into the hot skillet and gently flatten them with the back of your spoon.

    Cook for 3 to 4 minutes per side until they turn a beautiful golden brown color.
