This eggplant bolognese is one of my favorite ways to use up garden produce. It is surprisingly creamy and satisfying, making it a perfect meal for those busy weeknights when you want something cozy but fresh.

Since this comes together in just one pot, you will spend less time at the sink cleaning up and more time enjoying your dinner. I love serving this over a pile of al dente pasta with plenty of fresh basil on top.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium eggplant, finely diced
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 jar (24 ounces) of your favorite marinara sauce
  • 1/2 cup vegetable broth
  • 1/2 cup grated parmesan cheese or vegan alternative
  • 1/2 cup fresh basil leaves, torn
  • Salt and black pepper to taste
  • 1 pound cooked pasta of choice

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the diced eggplant and onion to the pot, cooking until they are softened and lightly browned.

    Stir in the minced garlic and oregano, cooking for about one minute until fragrant.

    Pour in the marinara sauce and vegetable broth, then stir everything together.

    Let the sauce simmer for about fifteen minutes so the eggplant breaks down and becomes tender.

    Stir in the parmesan cheese and season with salt and pepper.

    Toss the cooked pasta into the pot to coat it thoroughly with the sauce.

    Serve warm, topped with fresh basil leaves.

Leftovers store beautifully in an airtight container in the fridge for up to three days. For a heartier meal, you can stir in cooked lentils or serve with a side of crusty garlic bread.
