When summer tomatoes are at their best, I love making this simple tart. It looks fancy enough to serve at a dinner party, but it honestly takes no time at all to pull together. The puff pastry gets wonderfully crisp and buttery, providing the perfect base for fresh, sun ripened tomatoes.

My favorite thing about this recipe is how versatile it is. You can use any variety of tomatoes you have on hand, from tiny cherry tomatoes to large sliced heirlooms. Just remember to blot your tomato slices with a paper towel if they seem extra juicy so your pastry stays nice and crispy.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 cup shredded Gruyere or mozzarella cheese
  • 1 pound tomatoes, thinly sliced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 egg, beaten for egg wash
  • Fresh basil leaves for garnish
