This chicken salad is my go to lunch when I want something healthy but also really filling. It comes together in just a few minutes using leftover or store bought cooked chicken, and the combination of honey mustard with fresh fruit is honestly so refreshing.

My biggest tip for this salad is to use a crisp apple like a Honeycrisp or a Fuji. These hold up really well in the dressing without getting mushy, which keeps the texture perfect if you are packing this for work the next day.

Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 1/2 cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 Honeycrisp apple, diced
  • 2 stalks celery, finely chopped
  • 1/4 cup chopped nuts like pecans or walnuts
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

    In a large bowl, whisk together the Greek yogurt, Dijon mustard, honey, salt, and pepper until the dressing is smooth.
