There is nothing better than a lunch that takes minutes to throw together but still feels special. This tuna salad combines pantry staples like chickpeas and tuna with crunchy fresh vegetables for a meal that hits every note.

I love this recipe because it is perfect for busy afternoons when you want something healthy but do not feel like turning on the stove. If you have leftovers, store them in the fridge and they will taste even better the next day once the dressing soaks in.

Ingredients

  • 2 cans of tuna, drained well
  • 1 can of chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely diced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

    Drain your tuna and chickpeas thoroughly to make sure the salad does not get watery.
