Packing lunches for kids can be a bit of a challenge, but these pinwheels make the process much smoother. They are bite sized, packed with protein, and hold up perfectly in a lunchbox until it is time to eat.

You can easily customize these by swapping the turkey for ham or adding a thin layer of spinach for a bit of extra color. Just make sure to roll them tightly so they stay together when you slice them into little rounds.

Ingredients

  • 2 large whole wheat tortillas
  • 4 tablespoons cream cheese, softened
  • 4 slices deli turkey breast
  • 4 slices cheddar cheese
  • 1/2 cup shredded lettuce

Instructions

    Lay the tortillas flat on a clean cutting board or plate.

    Spread two tablespoons of cream cheese evenly over each tortilla, reaching close to the edges.

    Place two slices of turkey and two slices of cheddar cheese on each tortilla.

    Sprinkle a bit of shredded lettuce over the top of the cheese.

    Roll each tortilla up tightly into a firm log shape.

    Use a serrated knife to slice each log into one inch thick pinwheels.
