Fried rice is a takeout classic that is easy, filling, and inexpensive. I love making this version at home because it saves me money and gives leftover rice and any bits of vegetables in my fridge a second life. Think of this as a base recipe you can customize with whatever protein or produce you have on hand.

Since I use a regular skillet instead of a wok, I cook the eggs, vegetables, and rice separately. This ensures everything cooks evenly without overcrowding the pan. It is a foolproof method that keeps the rice from getting soggy and ensures every bite is full of flavor.

Ingredients

  • 3 cups cooked white rice, chilled
  • 2 tablespoons vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 2 cups mixed vegetables, chopped small
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • Green onions for garnish, optional

Instructions

    Ensure your rice is completely cold before you begin. If you do not have leftovers, spread fresh cooked rice on a baking sheet and refrigerate it until cool.

    Heat a small amount of oil in a large skillet over medium heat. Add the eggs and scramble them until just set, then remove them from the pan and set aside.

    Increase the heat to medium high and add another tablespoon of oil to the skillet.
