Fried rice is a takeout favorite because it is filling, delicious, and very easy to make in your own kitchen. I love this recipe because it helps me save money and gives leftover rice a second life. It is a fantastic base that you can customize with whatever vegetables or protein you currently have in your fridge.

You do not need a fancy wok to get great results. By cooking the eggs, vegetables, and rice in stages, you ensure everything gets perfectly tender and flavorful. It is a wonderful, quick meal that works just as well for a busy lunch as it does for a comforting dinner.

Ingredients

  • 3 cups cooked white rice, preferably cold
  • 2 tablespoons vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 2 cups mixed vegetables, such as chopped carrots, bell peppers, or broccoli
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • Green onions for garnish, optional

Instructions

    Prepare all of your ingredients before you start cooking, as this dish comes together very quickly.

    Heat one tablespoon of oil in a large skillet over medium heat. Add the beaten eggs and scramble them until just set, then remove the eggs from the pan and set them aside.

    Add the remaining tablespoon of oil to the same skillet and increase the heat to medium high. Add the vegetables and cook until they are tender and lightly browned, about 5 minutes.

    Add the garlic and ginger to the skillet and cook for about 30 seconds until fragrant.

    Add the cold rice to the skillet. Stir and cook for a few minutes until the rice is heated through and slightly fried.

    Stir the cooked eggs back into the skillet. Drizzle the soy sauce and toasted sesame oil over the mixture.

    Toss everything together until well combined and coated in the sauce. Remove from the heat and garnish with green onions if you like.

Store any leftovers in an airtight container in the refrigerator for up to three days. When serving, feel free to add a splash of sriracha or extra soy sauce to suit your taste preferences.
