My favorite trick for this dish is to tuck the herbs right under the skin of the chicken. This ensures that the flavor stays moist and bold throughout the cooking process every single time.

Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 lemons, sliced into rounds
  • 4 cloves garlic, smashed
  • 1 bunch fresh rosemary
  • 1 bunch fresh thyme
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
