People love this recipe because it is simple and reliable. The trick is to fan the noodles out so they do not stick together while cooking. If you have meat eaters at home, you can easily brown some ground beef or turkey first, or just enjoy it exactly as it is for a quick and comforting meal.
Ingredients
- 28 ounces fire roasted crushed tomatoes
- 3 cups water
- 1 pound dry spaghetti noodles
- 1 tablespoon garlic powder
- 1 cup fresh baby spinach
- 1 handful fresh basil leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- 1
In a small bowl, mix the crushed tomatoes, water, olive oil, garlic powder, salt, and pepper.
- 2
Pour a thin layer of the sauce into the bottom of the Instant Pot inner liner.
- 3
Break the spaghetti noodles in half and fan them out across the bottom of the pot, ensuring they are not all clumped in one direction.
- 4
Pour the remaining sauce over the top of the noodles, making sure the pasta is covered. Do not stir.
- 5
Place the lid on the Instant Pot and turn the valve to the sealing position.
- 6
Cook on high pressure for 6 minutes.
- 7
Once the timer finishes, perform a quick release of the pressure. Use caution as the steam will be very hot.
- 8
Open the lid, stir in the fresh spinach and basil, and let the dish rest for 3 to 5 minutes so the sauce thickens before serving.
๐ก Tips
Store any leftovers in an airtight container in the refrigerator for up to 4 days. If the noodles have absorbed too much sauce, simply add a splash of water when you reheat them. You can also top your bowl with goat cheese or parmesan for extra creaminess.
