There is nothing quite as nostalgic as a bowl of rainbow sherbet. The bright orange, green, and pink swirls always bring back memories of childhood summers, and making it at home using real fruit juice tastes so much better than the version you find in the grocery store freezer aisle.

Because this recipe involves making three separate batches of sherbet, it is a fun project to tackle on a weekend. If you have an ice cream maker with a freezer bowl, just remember to plan ahead by giving your bowl enough time to freeze completely between each batch.

Ingredients

  • 1 batch prepared orange sherbet base
  • 1 batch prepared lime sherbet base
  • 1 batch prepared raspberry sherbet base
  • 2 drops green food coloring (for the lime portion only)
  • Fresh raspberries for garnish

Instructions

  1. 1

Prepare each of the three sherbet bases separately according to your chosen fruit recipes.

  2. 2

Churn each flavor in your ice cream maker one at a time, making sure to freeze the machine bowl between batches if necessary.

  3. 3

Transfer each finished flavor to its own container and freeze them until they are firm and set.

  4. 4

Once the sherbets are solid, prepare a loaf pan for assembly.

  5. 5

Scoop small, alternating dollops of each flavor into the bottom of the loaf pan to create a colorful layer.

  6. 6

Continue adding layers of scoops until the pan is full, being careful not to stir or mix the colors together.

  7. 7

Gently smooth the top with a spoon and place the container back into the freezer for at least one hour to firm up.

  8. 8

Serve in scoops, inside waffle cones, or topped with a splash of ginger ale as a float.

๐Ÿ’ก Tips

Serve your sherbet alongside a slice of angel food cake to balance the tart fruit flavors. Store leftovers in an airtight container in the freezer for up to one week for the best texture and taste.
