There is something truly magical about biting into a warm, fresh beignet. These classic New Orleans donuts are soft on the inside and perfectly crispy on the outside, making them the ultimate comfort food for a slow weekend morning.

My best tip for success is to keep your oil at a steady temperature. If it is too cool, the dough will soak up the oil, but if it is too hot, they will brown before the inside is cooked through. A kitchen thermometer is your best friend here.

Ingredients

  • 1 cup warm water
  • 1/2 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1 large egg, beaten
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 4 cups all purpose flour
  • 1 tablespoon active dry yeast
  • Vegetable oil for frying
  • Confectioners sugar for dusting

Instructions

  1. 1

In a large bowl, combine the warm water, sugar, evaporated milk, egg, oil, and salt.

  2. 2

Stir in about two cups of the flour and the yeast until smooth.

  3. 3

Gradually mix in the remaining flour until a soft dough forms.

  4. 4

Cover the bowl and let the dough rise in a warm place for about an hour.

  5. 5

Roll the dough out on a floured surface to about a quarter inch thickness and cut into two inch squares.

  6. 6

Heat about three inches of oil in a heavy pot to 360 degrees Fahrenheit.

  7. 7

Drop the squares into the hot oil in small batches and fry until golden brown on both sides.

  8. 8

Drain the beignets on paper towels and immediately dust them generously with confectioners sugar while they are still warm.

๐Ÿ’ก Tips

These are best enjoyed right away while they are fresh and warm. If you have leftovers, store them in an airtight container at room temperature for one day and reheat them briefly in a warm oven to restore the crispiness.
