When I am busy during the week and need something fast, these spicy sesame noodles are always my first choice. They satisfy those takeout cravings right in my own kitchen and take almost no effort to throw together.

My best tip for this recipe is to keep a little bit of the pasta water aside. If the sauce looks too thick once you toss it with the noodles, a splash of that starchy water will make everything nice and silky.

Ingredients

  • 8 ounces of your favorite noodles like ramen or spaghetti
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon chili garlic sauce or sriracha
  • 1 tablespoon peanut butter
  • 1 teaspoon sugar
  • 1 clove minced garlic
  • 1 teaspoon grated fresh ginger
  • 2 sliced green onions
  • 1 teaspoon toasted sesame seeds

Instructions

    Bring a large pot of water to a boil and cook the noodles according to the package directions.

    While the noodles cook, whisk the soy sauce, sesame oil, chili garlic sauce, peanut butter, sugar, garlic, and ginger together in a small bowl until smooth.

    Drain the noodles well and place them back into the pot or a large mixing bowl.

    Pour the sauce over the hot noodles and toss everything until well coated.

    Top with the sliced green onions and sesame seeds before serving.

These noodles taste great hot or cold, so they make excellent leftovers for your lunch the next day. You can store them in an airtight container in the fridge for up to three days. If you want a bit more crunch, feel free to add some chopped peanuts or blanched broccoli on top.
