There is something so satisfying about a creamy bowl of beef stroganoff after a long day. It is the kind of meal that feels special enough for company but is simple enough to put together on a busy Tuesday night.

My favorite trick for this recipe is to make sure your steak is sliced thin against the grain. This keeps the meat nice and tender while it simmers in that savory sour cream sauce.

Ingredients

  • 1 pound sirloin steak, thinly sliced
  • 8 ounces egg noodles
  • 2 tablespoons butter
  • 1 onion, diced
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1

Cook the egg noodles in a large pot of salted water according to the package directions, then drain and set aside.

  2. 2

Melt one tablespoon of butter in a large skillet over medium high heat.

  3. 3

Add the steak strips in a single layer and brown them quickly on both sides, then remove the meat from the pan and set aside.

  4. 4

In the same skillet, add the remaining butter, onion, and mushrooms. Cook until the vegetables are soft and the mushrooms are golden brown.

  5. 5

Stir in the garlic and cook for about one minute until fragrant.

  6. 6

Sprinkle the flour over the vegetables and stir well to coat, then slowly pour in the beef broth and Dijon mustard while whisking to prevent lumps.

  7. 7

Let the sauce simmer for a few minutes until it begins to thicken.

  8. 8

Return the steak and any juices to the pan, then remove from the heat and stir in the sour cream until smooth.

  9. 9

Serve the stroganoff hot over the cooked noodles and sprinkle with fresh parsley.

๐Ÿ’ก Tips

Serve this over a bed of buttery egg noodles or creamy mashed potatoes to soak up the sauce. If you have leftovers, store them in an airtight container in the fridge for up to three days, but reheat gently on the stove so the sauce does not separate.
