Beef stroganoff is one of those meals that always makes the house smell amazing. My family loves how the tender steak strips soak up all that tangy, savory gravy, and I love that it only takes one pan to make.

For the best results, make sure you do not crowd the pan when you sear the meat. Cooking it in batches helps the beef get a nice brown crust, which adds so much flavor to the final sauce.

Ingredients

  • 1 pound sirloin steak, cut into thin strips
  • 8 ounces sliced cremini mushrooms
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1.5 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • Salt and black pepper to taste
  • 12 ounces cooked egg noodles
  • Fresh parsley for garnish

Instructions

    Season the beef strips with salt and pepper. Melt one tablespoon of butter in a large skillet over medium high heat.

    Sear the beef in batches until browned on both sides, then remove the meat from the pan and set it aside.

    In the same skillet, melt the remaining butter and add the mushrooms and onions. Cook them until the onions are soft and the mushrooms have browned.

    Stir in the garlic and cook for just one minute until it smells fragrant.

    Sprinkle the flour over the vegetables and stir well to coat them. Cook for a minute to get rid of the raw flour taste.

    Slowly pour in the beef broth and Worcestershire sauce while stirring constantly. Let the sauce simmer until it starts to thicken.

    Turn the heat down to low and stir the beef back into the pan.

    Gently stir in the sour cream until the sauce is smooth. Do not let it boil once the sour cream is added.

    Serve the stroganoff over warm egg noodles and sprinkle with fresh parsley.

If the sauce gets too thick, you can thin it out with a little extra splash of beef broth. Store any leftovers in an airtight container in the fridge for up to three days, but reheat it gently so the sour cream does not separate.
