I have been searching for easy ways to include more zucchini in our dinner rotation, and this dish has been such a hit at my house. It is packed with golden brown chicken sausage, tender vegetables, and creamy orzo, all finished with a bright splash of lemon and fresh dill.

What I love most is how simple it is to put together. You only need one pan and about thirty minutes to get this on the table. It manages to feel like true comfort food while still tasting light and fresh enough for a busy weeknight.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 1 medium zucchini, diced
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 3 cups fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh dill
  • Salt and pepper to taste
