One Pan Mediterranean Chicken Sausage and Orzo
This bright and comforting one pan meal combines savory chicken sausage with fresh zucchini, spinach, and tangy feta cheese.
dailyrecipesbook.comI have been searching for easy ways to include more zucchini in our dinner rotation, and this dish has been such a hit at my house. It is packed with golden brown chicken sausage, tender vegetables, and creamy orzo, all finished with a bright splash of lemon and fresh dill.
What I love most is how simple it is to put together. You only need one pan and about thirty minutes to get this on the table. It manages to feel like true comfort food while still tasting light and fresh enough for a busy weeknight.
Ingredients
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 1 medium zucchini, diced
- 1 cup uncooked orzo pasta
- 2 cups chicken broth
- 3 cups fresh baby spinach
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh dill
- Salt and pepper to taste
Instructions
- 1
Heat the olive oil in a large skillet over medium high heat.
- 2
Add the sliced chicken sausage and cook until it is nicely browned on both sides, then remove the sausage from the pan and set it aside.
- 3
Add the zucchini to the same pan and sautรฉ for about three minutes until it starts to soften.
- 4
Stir in the uncooked orzo, then pour in the chicken broth.
- 5
Bring the liquid to a gentle simmer, cover the pan, and cook for about eight to ten minutes until the orzo is tender and most of the liquid is absorbed.
- 6
Stir the cooked sausage and fresh spinach back into the pan, cooking for just a minute or two until the spinach wilts.
- 7
Remove from the heat and stir in the feta cheese, lemon juice, and fresh dill before serving.
๐ก Tips
Serve this dish immediately while the orzo is creamy and the feta is slightly softened. If you have leftovers, store them in an airtight container in the fridge for up to three days and add a small splash of water or broth when reheating.
