The John Collins is one of my favorite ways to enjoy whiskey when I want something light and fizzy. By taking the spirit, citrus, and soda formula of a classic Collins and swapping in smooth bourbon, you get a drink that feels like a sparkling whiskey sour. It is refreshing, bold, and incredibly simple to stir together.

Because this is a highball drink, you do not need any fancy cocktail shakers or extra equipment. I love serving these at gatherings because guests can build their own glass in seconds. Make sure to use fresh lemon juice rather than the bottled kind, as the bright citrus flavor really makes the oaky notes of the bourbon shine through.

Ingredients

  • 2 ounces bourbon whiskey
  • 1 ounce fresh lemon juice
  • 0.5 ounce simple syrup
  • 3 ounces soda water
  • Ice cubes
  • Lemon wedge and cocktail cherry for garnish

Instructions

  1. 1

Pour the bourbon, fresh lemon juice, and simple syrup into a tall highball glass.

  2. 2

Fill the glass to the top with ice cubes.

  3. 3

Pour the soda water over the mixture until the glass is full.

  4. 4

Give the drink a gentle stir to combine the ingredients.

  5. 5

Garnish with a lemon wedge and a cocktail cherry, then add a straw if you like.

๐Ÿ’ก Tips

To store simple syrup, keep it in a sealed jar in the refrigerator for up to a month. If you want to get creative, try using honey syrup or maple syrup instead of standard simple syrup for a richer flavor. Always serve this drink immediately while the soda water is nice and bubbly.
