Back to school season means our mornings get a lot busier, and finding time for a proper breakfast can feel impossible. I love making these egg muffins because you can whip them up over the weekend and have a protein packed meal ready to grab from the fridge all week long.

You can easily customize these with whatever veggies or cheese you have hiding in your kitchen. My favorite trick is to use a silicone muffin tin so they pop right out without any sticking at all.

Ingredients

  • 8 large eggs
  • 1/2 cup milk
  • 1 cup chopped fresh spinach
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a muffin tin with cooking spray.

    Whisk the eggs, milk, salt, and pepper together in a large bowl until well combined.

    Divide the spinach, cheese, bell peppers, and onion evenly into the twelve muffin cups.

    Pour the egg mixture over the vegetables in each muffin cup until they are about three quarters full.

    Bake for 20 to 25 minutes or until the eggs are set and slightly golden on top.

    Let the muffins cool in the tin for five minutes before removing them to a wire rack.

Store these muffins in an airtight container in your fridge for up to four days. You can warm them up in the microwave for thirty seconds when you are ready to eat. These are great for kids to grab on their way out the door.
