Simple Sautéed Broccolini with Lemon and Parmesan
This is a quick and delicious way to get perfectly tender broccolini with golden charred edges.

While I have tried roasting and grilling, I keep coming back to this skillet method because it gives you the best of both worlds. You get those lovely charred edges while the stalks stay perfectly crisp and tender.
The secret is to sear the greens in olive oil before adding a little water to steam them through. By adding the garlic at the very end, it stays fragrant and avoids that bitter burnt taste. A squeeze of fresh lemon and a dusting of Parmesan make this dish a total winner that disappears from the table in minutes.
Ingredients
- 1 bunch of broccolini
- 2 tablespoons olive oil
- 2 cloves garlic, thinly sliced
- 2 tablespoons water
- 1 tablespoon fresh lemon juice
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste

Trim the tough ends off the broccolini stalks and rinse them well.

Heat the olive oil in a large skillet over medium high heat.

Add the broccolini to the pan in a single layer and let it sear for about 3 minutes until the stalks begin to brown.

Pour in the water and immediately cover the skillet with a lid to steam the broccolini for 2 minutes.

Remove the lid, add the sliced garlic, and stir for another minute until the garlic is fragrant and the water has evaporated.
