Grilled corn is such a classic side dish for any backyard barbecue or simple weeknight dinner. It is incredibly easy to prepare and highlights the natural sugary goodness of fresh corn without needing fancy ingredients.

My favorite thing about this recipe is how versatile it is depending on the texture you prefer. Whether you want the corn to steam inside its own husk or you love that smoky flavor from a direct char on the grates, both ways turn out delicious every time.

Ingredients

  • 4 ears of fresh corn
  • 4 tablespoons butter, softened
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

    If you want to grill with the husks on, pull back the husks to remove the silk, then pull the husks back up around the corn.

    If you prefer a charred finish, peel the husks and silk off completely so the kernels are bare.

    Preheat your grill to medium heat.

    Place the corn on the grill. If the husks are on, grill for about 15 to 20 minutes, turning occasionally. If the husks are off, grill for 8 to 10 minutes, rotating often until you see nice char marks.

    Brush the hot corn with butter and sprinkle generously with salt and pepper before serving.

💡 Tips

Try adding a squeeze of fresh lime juice or a sprinkle of chili powder for a zesty twist. If you have leftovers, cut the kernels off the cob and store them in an airtight container in the fridge to use in salads or tacos the next day.
