The secret to getting that beautiful bakery style dome is starting with a higher temperature for a few minutes before turning it down. It gives the batter a quick lift right at the start. I love sprinkling a little extra cinnamon sugar on top for a sweet crunch that pairs perfectly with the soft middle.

Ingredients

  • 2 cups all purpose flour
  • 1 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cinnamon sugar for topping
