Quesillo is a beloved Venezuelan dessert that feels like a cross between flan and a rich, creamy custard. It is famous for the little air bubbles that give it a unique texture, making it light yet indulgent.

Ingredients

  • 1 cup white sugar
  • 1 can sweetened condensed milk
  • 1 cup whole milk
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum (optional)

Instructions

    Place the sugar in a metal flan mold or a round cake pan and cook over medium heat on the stove, stirring until it turns into a smooth golden caramel.

    Carefully tilt the pan to coat the bottom and sides with the caramel, then set it aside to harden.

    In a blender, combine the condensed milk, whole milk, eggs, vanilla, and rum if you are using it.

    Blend on medium speed for about one minute until the mixture is smooth and combined.

    Pour the custard mixture into your prepared pan over the hardened caramel.

    Cover the pan tightly with aluminum foil to keep steam out.

Always run a thin knife around the edge of the pan before flipping the quesillo onto a serving plate to help it release cleanly. Store any leftovers in the refrigerator for up to three days. This dessert tastes even better the next day after the flavors have had time to settle.
