When the late summer days start to feel a bit busier, I love having a healthy breakfast ready in the fridge. These baked oats taste just like a warm apple crisp but are nutritious enough to start your day off right.

My favorite thing about this recipe is how it fills the house with the scent of cinnamon and apples. You can easily prep a batch on Sunday night and just reheat individual portions throughout the week.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped pecans
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk of your choice
  • 1 large egg
  • 1/4 cup melted butter
  • 1/4 cup maple syrup
  • 2 medium apples, peeled and diced

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and lightly grease a baking dish.

  2. 2

In a large bowl, whisk together the oats, pecans, baking powder, cinnamon, and salt.

  3. 3

In a separate bowl, mix the milk, egg, melted butter, and maple syrup until well combined.

  4. 4

Add the wet ingredients to the dry ingredients and stir in the diced apples.

  5. 5

Pour the mixture into your prepared baking dish and spread it out evenly.

  6. 6

Bake for 35 to 40 minutes until the top is golden and the center is set.

  7. 7

Let it cool for a few minutes before serving warm.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to four days. You can reheat a single portion in the microwave for about one minute. Try serving it with a splash of cold milk or a dollop of Greek yogurt on top.
