There is something so satisfying about a simple side dish that comes together in just one pan. This creamy broccoli rice is a favorite in my house because it pairs perfectly with roasted chicken, grilled fish, or even a simple weeknight steak.

I love how the broccoli steams right along with the rice to keep things easy. If you want to save even more time, just make sure you chop your broccoli florets into nice, small pieces so they cook evenly with the grains.

Ingredients

  • 1 tablespoon butter
  • 1 cup long grain white rice
  • 2 cups vegetable or chicken broth
  • 2 cups small broccoli florets
  • 1/2 cup half and half
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

    Melt the butter in a large skillet or saucepan over medium heat.

    Add the rice to the pan and stir it for a minute until it smells slightly toasted.

    Pour in the broth and bring everything to a gentle boil.
