Street Corn Chicken Enchiladas

Ingredients
- 2 cups green enchilada sauce
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 3 cups shredded chicken
- 2 cups corn kernels
- 2 cups shredded Monterey Jack cheese
- 1 can (4 ounces) diced green chilies
- 8 flour or corn tortillas
- 1/4 cup crumbled cotija cheese
- Chopped cilantro for garnish

Preheat your oven to 350 degrees F and lightly spray a 9 x 13 inch baking dish with nonstick cooking spray.

In a bowl, whisk together the green enchilada sauce, sour cream, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper. Set this sauce aside.

In a large bowl, combine the shredded chicken, corn, half of the shredded Monterey Jack cheese, and the green chilies. Stir in 1 cup of your prepared sauce.

Spread 1/2 cup of the remaining sauce over the bottom of your baking dish.

Spoon about 1/2 cup of the chicken mixture into the center of each tortilla, roll them up tightly, and place them seam side down in the dish.

Pour the rest of the sauce over the top, then sprinkle with the remaining Monterey Jack cheese and the crumbled cotija cheese.

Bake uncovered for 20 to 25 minutes until the cheese is melted and the sauce is bubbly. Garnish with fresh cilantro before serving.
