This comforting skillet dinner brings together savory Caesar flavors, tender chicken, and a satisfying crunch in one easy meal.
dailyrecipesbook.comIf you love a classic Caesar salad, you are going to adore this cozy pasta version. It takes all those zesty, creamy notes and turns them into a hearty dinner that feels like a warm hug in a bowl.
My favorite thing about this dish is the crouton topping. It adds that perfect crunch you expect from a Caesar salad, making every bite feel special without any extra fuss. It is a fantastic option for busy weeknights when you want something satisfying on the table quickly.
Ingredients
- 1.5 pounds chicken breast, diced
- 2 cups Caesar dressing, divided
- 1 pound short pasta, such as rotini or penne
- 2 tablespoons olive oil, divided
- 1 teaspoon minced garlic
- 2/3 cup chicken broth
- 4 ounces cream cheese
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1 cup crushed seasoned croutons
Instructions
- 1
Place the diced chicken in a bowl or bag with 3/4 cup of the Caesar dressing and let it marinate for at least 30 minutes.
- 2
Cook your pasta in boiling water according to the package directions, then drain it and set aside.
- 3
Heat one tablespoon of olive oil in a large deep skillet over medium heat. Add the marinated chicken and cook for 6 to 8 minutes until it reaches 165 degrees Fahrenheit. Remove the chicken to a plate and keep it warm.
- 4
In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Cook for about 30 seconds until fragrant.
- 5
Pour in the chicken broth and use a wooden spoon to scrape up all those tasty browned bits from the bottom of the pan.
- 6
Stir in the cream cheese, the remaining Caesar dressing, Italian seasoning, onion powder, garlic powder, salt, and pepper. Whisk over medium heat until the cream cheese melts and the sauce thickens.
- 7
Lower the heat and whisk in the Parmesan cheese until the sauce is smooth.
- 8
Add the cooked pasta and chicken back into the skillet, tossing everything together until well coated. Top with the crushed croutons and serve immediately.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. When you reheat the pasta, add a small splash of water or broth to help loosen the sauce, and remember to add fresh croutons right before serving so they stay nice and crunchy.
