This creamy chowder is one of my favorite ways to celebrate fresh summer corn and peppers. It is the perfect meal when you want something satisfying that feels like a big warm hug in a bowl.

My best tip is to use fresh corn cut right off the cob if it is in season. The sweetness really makes the flavors pop, but frozen corn works just as well during the rest of the year.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 3 cups corn kernels
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion and red bell pepper to the pot and cook until they are soft and fragrant.

    Stir in the minced garlic and cook for about one minute until aromatic.

    Pour in the chicken broth, corn, cumin, and chili powder. Bring the mixture to a gentle boil.

    Lower the heat and let the soup simmer for about ten minutes so the flavors blend together.

    Stir in the shredded chicken and the heavy cream. Let the soup heat through for another five minutes.
