Easy Chicken Parmesan Casserole
This one dish meal gives you all the classic flavors of chicken Parmesan without the hassle of individual breading and frying.
dailyrecipesbook.comEveryone loves a cozy pasta bake, and this version is a real winner when you are busy. By cooking the pasta directly in the sauce, you save so much time and keep the cleanup to just one pan. It is comfort food at its finest.
My favorite thing about this recipe is how the chicken stays so juicy while the top gets perfectly golden and bubbly. If you want an extra crunch, feel free to add a little more parmesan cheese before you pop it in the oven.
Ingredients
- 2 pounds boneless skinless chicken breasts cut into bite sized pieces
- 1 pound rotini pasta uncooked
- 48 ounces marinara sauce
- 2 cups chicken broth
- 3 cups shredded mozzarella cheese
- 1 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit.
- 2
Heat the olive oil in a large skillet over medium high heat. Season the chicken pieces with salt, pepper, garlic powder, and oregano.
- 3
Sear the chicken until it is browned on all sides, then remove it from the heat.
- 4
In a large 9 by 13 inch baking dish, combine the uncooked rotini, marinara sauce, chicken broth, and the seared chicken.
- 5
Cover the dish tightly with foil and bake for 30 minutes.
- 6
Remove the foil, stir the mixture gently, and sprinkle the mozzarella, panko, and parmesan cheese evenly over the top.
- 7
Bake uncovered for another 15 to 20 minutes until the cheese is melted and bubbly and the pasta is tender.
๐ก Tips
Leftovers store perfectly in an airtight container in the fridge for up to three days. To reheat, just add a splash of water and warm it in the oven or microwave until it is heated through. Serve this with a fresh side salad or some toasted garlic bread.
